The Certificate III in Commercial Cookery course provides learners with the essential skills and knowledge to work in a variety of venues where food is prepared and served. The course includes eight subjects designed to reflect the modern kitchen skill sets required of all chefs.

When you complete the course, you will be able to take responsibilities in planning, organising, preparing and presenting food such as appetisers, stocks, meats, seafood and poultry, desserts and pastries, following health and safety procedures, maintaining kitchen premises, developing hospitality industry knowledge, developing cost effective menus and preparing food according to dietary and cultural needs.

This course is delivered in a mix of face to face training at our campus (40 Lord St, East Perth) and workplace training at an appropriate hospitality establishment as a trainee chef. The face-to-face training includes multi-media demonstrations, hands-on practical training in a commercial kitchen, practical training in a simulated hospitality environment

Graduates are suitable to work as a commis chef, a cook or an assistant cook. This course is suitable for apprenticeship.

Upon completion of Certificate III in commercial cookery, you can continue to study Certificate IV in Commercial Cookery with credit transfer. Qualifying as a chef in Australia is now more flexible than ever. Enrol in the course now and get job-ready for your career as a commercial chef.

Vocational Training Services (VTS) is a WA owned and operated training provider servicing Metro and Regional WA with training-staff based in Perth the Kimberley, Pilbara, Midwest and Great Southern.

This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafés, serviced living (aged care) and catering organisations.

VTS offers the Certificate III in Commercial Cookery as an apprenticeship and through Priority Industry Training (PIT) the mode of delivery is dependent on the individual’s workplace and experience, it may be delivered on the job and in a commercial training kitchen. The mix of workplace deliver versus in a training kitchen is determined after consultation with the student and employer. VTS will travel to regional locations to deliver training and assessment. Elective units are selected based on the trainee’s job role.
